Garnish:
Orange zest twist (expressed & discarded) and orange wedge rested across rim
How to make:
Squeeze oranges and grapefruits (stored in a refrigerator) using pillar or elbow press and fine strain to remove any flesh. Then BLEND with amaro at high speed (without ice) to make "fluffy" and pour into chilled glass. Fill glass with ice cubes.

1 1/2 fl oz | Amaro Santoni (chilled) |
1/6 fl oz | Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix) (optional) |
