Three Citrus Garibaldi

Serve in a Highball (max 10oz/300ml)

Ingredients:
2 oz Blood orange juice chilled
1 23 oz Pink grapefruit juice (freshly squeezed) chilled
1 12 oz Amaro Santoni chilled
16 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup) optional
× 1 1 serving

How to make:

  1. Select and pre-chill a Highball (max 10oz/300ml) glass.
  2. Prepare garnish of orange zest twist and orange wedge.
  3. SQUEEZE oranges and grapefruits (stored in a refrigerator) using pillar or elbow press and fine strain juice to remove any flesh.
  4. BLEND citrus juice with amaro at high speed (without ice) to make "fluffy" and pour into chilled glass.
  5. FILL glass with ice.
  6. EXPRESS orange zest twist over cocktail and discard.
  7. Garnish with orange wedge rested across rim.

a very effervescent and decidedly un-boozy Garibaldi. Delicious, but surprisingly way more difficult to get really foamy.

nice flavours but i would like a bit more OOMPH. might slap a shot of gin in it to make it nice and hard.
