Serve in a Highball (max 10oz/300ml)

1 2⁄3 oz | Pink grapefruit juice (freshly squeezed) chilled |
1 1⁄2 oz | Amaro Santoni chilled |
1⁄6 oz | Monin Pure Cane Syrup (US) optional |

Squeeze oranges and grapefruits (stored in a refrigerator) using pillar or elbow press and fine strain to remove any flesh. Then BLEND with amaro at high speed (without ice) to make "fluffy" and pour into chilled glass. Fill glass with ice cubes.
Why pop vitamin C tablets when you can chuck this bittersweet riff on a classic Garibaldi . (Depending on your citrus, you may want to add as much as a barspoon of sugar syrup.)
