POUR ingredients into ice-filled glass.

3 fl oz Martini Prosecco D.O.C.
2 fl oz Aperol Aperitivo
1 fl oz Soda (club soda) or sparkling water

Comment:

Slightly sweet, herbal, refreshing and quaffable.

The good folk at Aperol recommend equal parts prosecco and Aperol topped with a splash of soda. However, we've stuck with our prefered 3:2:1 ratio which is a little lighter on Aperol and noticeably fizzier. Along with specifying how you want your steak done and prefered Dry Martini ratio perhaps also stipulate your Aperol Spritz ratio.

Variant:

Soave is sometimes substituted for prosecco to produce a drier spritz.
