I wonder if this is somehow an oblique reference to the German dish Himmel und Erde (heaven and earth), comprising sausage accompanied by apple purée and delicate fried onion?

I think this depends on the ingredients. The apple juice varies in tartness/sweetness and mouthfeel. Orgeat (I do have a bottle of Giffard's but not at this home, and I prefer my own) can be more or less umami, and more almondy (?) or not. This has a great structure, but the ingredients will make it.

A very nice autumn cocktail. Used fresh, unfiltered apple cider. Orgeat + bitters balance quite nicely.
