Serve in a Collins glass

Ingredients:
1 oz Rémy Martin V.S.O.P. cognac
1 oz Lemon juice (freshly squeezed)
23 oz Giffard Crème de Pêche de Vigne liqueur
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
Top up with Brut champagne/sparkling wine
× 1 1 serving

How to make:

  1. Select and pre-chill a Collins glass.
  2. Prepare garnish of peach slices and mint sprigs.
  3. SHAKE first 4 ingredients with ice.
  4. STRAIN into ice-filled glass.
  5. TOP with sparkling wine.
  6. Garnish with peach slices and mint sprigs bouquet.

Solid concoction. Sparkling wine might be too much. Club soda was a fine sub, but clearly exposed the subtle flaws with the specs.

Very nice cocktail. Was unsure about the amount of lemon juice to include, so we did 1 oz. Turned out nice.
