Serve in a

Coupe glass

Garnish:

Float 3 drops Angostura Bitters

How to make:

MUDDLE blackberries in base of shaker. Add other ingredients, SHAKE with ice and strain back into shaker. DRY SHAKE (without ice) and fine strain into chilled glass.

5 fresh Blackberries
2 fl oz Bacardi Spiced
3/4 fl oz Lemon juice (freshly squeezed)
1/2 fl oz Giffard Sugar Cane Syrup
1/2 fl oz Pasteurised egg white
1 spoon Activated charcoal powder

Activated charcoal powder is potentially hazardous if used incorrectly.

Review:

A Rum Sour blackened with blackberries and activated charcoal. The black charcoal which makes this cocktail black does little for the taste and given the potential issues with charcoal this tasty cocktail is perhaps best appreciated without its addition (as illustrated photographed here).

History:

A cocktail which was widely made to celebrate the total solar eclipse which worked its way across the USA on 21 August 2017 – the first for 38 years.
