Method: Cook all ingredients for 4 hours in sous-vide system at 45°c. Serve hot with burned pine to give the sense of a forest, garnish with orange peel and little meringue.
15 ml Talisker storm
25 ml Cynar
50ml Full body red wine
40 ml Fresh orange juice
15g fresh ginger, 7g fennel, 4 sticks of cinnamon, 20 hibiscus which makes for a 1L of cocktail.
