Ingredients:
1 14 oz Americano bianco
34 oz Fernet Branca liqueur
1 oz Pink grapefruit juice (freshly squeezed)
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
2 oz Thomas Henry Pink Grapefruit soda

How to make:

  1. Select and pre-chill a Collins glass.
  2. Prepare garnish of grapefruit zest twist.
  3. SHAKE first 4 ingredients with ice.
  4. STRAIN into ice-filled glass.
  5. TOP with soda.
  6. EXPRESS grapefruit zest twist over cocktail and use as garnish.

History:

Adapted from a recipe created in 2012 by Tyler Wang at No. 9 Park, in Boston, USA. Apparently inspired by Milk & Honey's Rome is Burning cocktail. I've used pink grapefruit soda as I believe this adds to this cocktail more than the club soda called for in Tyler's original recipe.

The grapefruit and fernet work well together. Given the amount of fernet I was pleasantly surprised how it doesn’t dominate. The flavour profile (as opposed exact flavours): fruity-fresh-bitter-herbal almost cola, reminded me of one of my other favourites off this website, the Jeez Louise. Will definitely have again. I had to bump up the fresh grapefruit to about 40ml for my fruit today.

The first time I made this it was as written & I gave it 4 stars. The second time I decided to shake it with one small cube & 2oz. San Pellegrino Pompelmo in the shaker tin, knowing it's not as carbonated as most sodas it would probably be ok. I served it over recycled leftover ice from making other cocktails that I rinse off and put back in a freezer bag. Doing this made it a 5 star cocktail for me, having concentrated flavors while still being able to dilute it to my liking with a few stirs.

Delicious, from a Cocchi-lover and Fernet-hater. Make sure to drop soda from high above the drink for a big fluffy head.
