Serve in a Collins glass

Ingredients:
1 oz Strucchi Red Bitter (Campari-style liqueur)
1 oz Strucchi Dry Vermouth
1 oz Lime juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
1 12 oz Thomas Henry Soda Water
× 1 1 serving

How to make:

  1. Select and pre-chill a Collins glass.
  2. Prepare garnish of orange slice wheel.
  3. SHAKE first 4 ingredients with ice.
  4. STRAIN into ice-filled glass.
  5. TOP with soda.
  6. Garnish with orange slice.

History:

Adapted from a recipe created in 2008 by Michael McIlroy at Milk & Honey in Manhattan, New York City. Apparently, Michael was inspired by the Triumph of Pompeii cocktail, in turn inspired by Rome is Burning.

Very nice flavours - I made 2:1 sugar syrup and it felt too sweet in this quantity. Will try with simple syrup.

This is really nice. It's the first one I've had in a lon gtime where I actually enjoyed the vermouth so that's nice.

Best Aperitivo I had yet. Lovely drink that demonstrates that complexity and balance don't need a lot of alcohol.
I need to try the Rome Royal Riff with Champagne instead of Soda. Guess it'll be a blast.
