Serve in a Coupe glass

Ingredients:
1 12 oz Light white rum (charcoal-filtered 1-4 years old)
14 oz Yellow Chartreuse (or génépy liqueur)
12 oz Lime juice (freshly squeezed)
14 oz Agave syrup
1 dash Bob's Grapefruit Bitters
3 fresh Mint leaves
14 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba (chickpea water) or Vegan egg white replacement

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of grapefruit zest twist and mint leaf.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice).
  5. FINE STRAIN into chilled glass.
  6. EXPRESS grapefruit zest twist over cocktail and discarded.
  7. Garnish with mint leaf floated on the cocktail or pegged/stuck with spot of honey to the rim.

This is great, however i feel is a step down from "Daisy de Santiago" which is what came to mind when i tasted it.

Next experience: today I tried Havana 3yo instead of Bacardi. It works, but changes the taste and one has to up Chartreuse and reduce Agave syrup. Grapefruit twist is fine, especially if you rub the edge of the glass after twisting. The bitters I would still reduce to half.

Redoing this cocktail, I tried to be cautious with the bitters and change the grapefruit twist for a lime twist. Maybe a good solution for sweeter tooth.
