Review:

Judicious dashing of orange bitters and hitting the correct dilution will make or break this drink, which is a fine balance between aged rum and rich cherry liqueur versus dry fino sherry and aromatic bitters.

Used black tot rum as it was the only thing to hand, but very nice indeed

Beautiful and smooth evening sipper. Everything works perfectly. A hint of sweetness, but then the bitter. The herbal of the sherry and the rich flavours of the rum. I used 1/2 overproof gold rum and an 8 year old gold. Went perfectly watching a concert of Elgar.

Ran out of Fino, so I tried it with dry vermouth instead - turned out great!

Lovely sipper that perfectly strikes a balance between rich sweet ness and nutty sherry minerality. Collour and flavour are incredibly pleasurable. Year round sipper as the ice helps cut the richness.
