Ingredients:
1 1/2 fl oz Calvados / apple brandy / straight applejack
3/4 fl oz Belle de Brillet pear liqueur
1 fl oz Apple juice/apple cider (cloudy & unsweetened)
1 dash La Fée Parisienne absinthe
2 drop Saline solution 4:1 (20g sea salt to 80g water)

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of apple or pear slice, fresh or dehydrated.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with apple or pear slice, fresh/dehydrated, floated or on the rim.

In cockney rhyming slang 'apples and pears' means 'stairs'. The flavours of the fruits also combine well, here fortified with calvados.
