Not big Negroni fans, but decided to try this one as Simon created it. This was very enjoyable and perfect as an aperitivo. Just a hint of sweet, but well balanced. There is a slight bitterness, but not unpleasant. Excellent cocktail.

I didn’t have quite enough genever left so topped it up with bit of London dry gin. This has so much flavour

This is delicious! The amontillado sherry and genever give it a little bit of funkiness and complexity that a typical negroni can lack. I might try with a less bitter orange liqueur when I have one on hand, just for personal preference, but the Campari gives it the classic negroni flavor.

You are truly an artist Simon. Thanks again for a great alternative to the three equal parts negronis. The Sherry and Genever make this one unique. My Genever was Bols Original, the only one I can find in Seattle. I used Manzanilla as I had an open bottle. As soon as it's gone I'm immediately opening a bottle of Amontillado to revisit this.
