I am confused by step two, which says to “ Prepare garnish of place cocktail stick in glass and drop chilli oil on surface of drink where stick breaks meniscus so that the chilli oil is speared by the stick.” Except this is to be done before the drink is actually in the glass. Am I missing something?

This is another one of those stirred cocktails I really feel like should be served on a big rock. It's great with enough dilution, but the mezcal is going to be really overpowering until you suddenly get to that point which obviously can vary from person to person.

Wow pretty intense and true to the spirit of Mexican flavours. Rich, floral, delicate, smokey, spiced. I added a very light dusting of chili powder in place of chili oil. Superbly well balanced.

I went 1/2 mezcal 1/2 tequila, as I am not fond of straight mezcal drinks. Even so, didn’t care for this one. To each his own.

Please excuse my ignorance but what is "vermouth amaro"?

It's an amaro based on vermouth wine rather than a neutral spirit.

I made it with Tequila as my wife doesn't like Mezcal, worked pretty well
