1 23 fl oz Hayman's London Dry Gin
34 fl oz Lemon juice (freshly squeezed)
12 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
4 fl oz Thomas Henry Soda Water (chilled)

How to make

Glassware

Serve in a Highball (max 10oz/300ml)

Prepare

  1. Select and pre-chill a HIGHBALL (MAX 10OZ/300ML) GLASS.
  2. Prepare garnish of half lemon slice wheel.

Method

  1. SHAKE first 3 ingredients with ice.
  2. STRAIN into chilled glass. (No ice in glass.)
  3. TOP with soda.

  1. Garnish with half lemon slice wheel on rim.

244. Whiskey Fiz.
(Use small bar glass.)
4 or 5 dashes of gum syrup.
Juice of ½ a lemon.
1 small wineglass of whiskey.
Fill the glass half full of shaved ice, shake up well and strain into a glass.
Fill up the glass with Seltzer water from a syphon and drink without hesitation.

245. Brandy Fiz.
This is concocted the same way as the "Whiskey Fiz, substituting brandy for whiskey.

246. Gin Fiz.
The same as Whiskey Fiz, substituting gin for whiskey.

Review

Everyone has heard of this clean, refreshing cocktail, but few have experienced the real thing. The Gin Fizz is differentiated from a Gin Collins (properly called a John Collins) by the small (10oz max) highball glass it's served in. (Collins' are served in larger 12oz Collins glasses.) Importantly, a fizz is also served without ice in the glass.

Variations/similar cocktails

Some folks believe a Gin Fizz contains egg white, but the addition of egg white makes it a Silver Gin Fizz
With egg yolk it becomes a Golden Fizz
With a whole egg, it's a Royal Fizz
With brut sparkling wine in place of soda, it's a Diamond Fizz
With orange flower water and cream it's a Ramos Gin Fizz
With a dash of crème de menthe, it's a Green Fizz
With equal parts sloe gin and grapefruit juice in place of gin and lemon juice, it's a Purple Fizz

This is great (and surprisingly light) summer drink when made with these specs. Apart from the strong ratios and the sweeter garnish, I don't see what makes it different from a Tom Collins though?

The main difference is that a Fizz is served in a glass without ice (or with crushed ice) but a Collins is always over cubed/cracked ice. A Collins is also served in a 12oz - 14oaz glass while a Fizz is served in a Highball glass (max 10oz).
