Serve in a Martini glass

Ingredients:
1 fresh Passion fruit (fresh)
2 oz Bison grass vodka
1 oz Apple juice/apple cider (cloudy & unsweetened)
12 oz Monin Passion Fruit Syrup
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative

Garnish: Orange zest twist

How to make:

Cut passion fruit in half and scoop out the flesh into shaker. Add other ingredients, SHAKE with ice and fine strain into chilled glass. (You shouldn't need to dry shake to achieve desired foam head.)

History:

Created in 2004 by yours truly and inspired by Max Warner's excellent Autumn Punch. In keeping with every cocktail served straight-up and in a Marting glass in those days, this was originally named Autum Marini, it was an Alternatini.

One of my favourite cocktails. I omit the eggwhite, although without I get a nice foam without the specific smell.

Delicious. We both agree that it tastes like coconut. Maybe the orange in the egg white foam?
