Ingredients:
1 12 oz Bourbon whiskey
1 12 oz Apple juice/apple cider (cloudy & unsweetened)
13 oz Lime juice (freshly squeezed)
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
2 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare cinnamon stick for garnish.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice).
  5. FINE STRAIN into chilled glass.
  6. Grate cinnamon stick over cocktail.

Review:

Most would pair lemon juice with whiskey but lime sits well with the apple juice in this recipe to produce a very refreshing bourbon aperitivo.

I made it with maple syrup instead of sugar and added the cinnamon into the shaker with rest of the ingredients.
Wonderful, autumnal drink, reminiscent of an apple-cinnamon cookie.

Agreed. Maple syrup or demerara is the way to go.

I've opted for a bit of ruby port topping the cream, as I've seen in I think several other sours, but I might be mistaken; i.e., I like it, but it is at your own risk to use it instead of the topping of cinnamon powder

Liked this a lot. As I didn’t have saline solution, I used smoked salt which worked wonderfully with the bourbon.

It's apple juice, not cider. Not a problem to shake with apple juice.

In my haste to try this drink I forgot to dust with cinnamon. Oh well!
Still tasted absolutely delicious.
