1/6 fl oz | Grenadine/pomegranate syrup |
1/12 fl oz | Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix) |
1/2 fl oz | Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer |

How to make:
- Select and pre-chill a Coupe glass.
- Prepare garnish of grated nutmeg.
- SHAKE all ingredients with ice and strain back into shaker.
- DRY SHAKE (without ice).
- FINE STRAIN into chilled glass.
- Garnish with a dusting of nutmeg grated over the cocktail.

This drink is deliciously different. Rum, grapefruit, and pomegranate are smoothed with egg white and spiced with nutmeg.

Shake well with ice, strain into chilled cocktail glass, grate nutmeg over and serve.
