How to make:
SHAKE all ingredients with ice and strain back into shaker. DRY SHAKE (without ice) and fine strain into chilled glass.
1 1/2 fl oz | Light white rum (charcoal-filtered 1-4 years old) |
1/3 fl oz | Pink grapefruit juice (freshly squeezed) |
1/6 fl oz | Grenadine/pomegranate syrup (2:1) |
1/12 fl oz | Sugar syrup 'rich' (2 sugar to 1 water, 65.0°brix) |
1/2 fl oz | Pasteurised egg white (or aquafaba) |

Shake well with ice, strain into chilled cocktail glass, grate nutmeg over and serve.
