Serve in a Coupe glass

Ingredients:
1 34 oz Hayman's London Dry Gin
1 oz Dubonnet/French rouge aromatised wine
14 oz Kirschwasser (cherry) eau-de-vie
1 dash Orange Bitters by Angostura
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lemon zest twist.
  3. STIR all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. EXPRESS lemon zest twist over the cocktail and use as garnish.

Jason says this cocktail is related to the Blackthorn No. 4 in William "Cocktail Bill" Boothby's 1930 World Drinks and How To Prepare Them and the Merry Widow in Albert Stevens Crockett's 1935 The Old Waldorf-Astoria Bar Book.

BLACKTHORN, NO. 4
Gin . . . . . . . . . . . . . ½ jigger
Dubonnet . . . . . . . . ¼ jigger
Kirschwasser . . . . . ¼ jigger
Stir well with ice, strain into chilled glass and serve.

More Jason Clapham magic. Beautiful interplay of herbal notes with richness and fruitiness from the Dubonnet and kirschwasser. I didn’t have the best ingredients available tonight but would still definitely have again.

The rebalancing here compared the regular blackthorn no. 4 really makes it sing - in particular knocking back the kitschwasser reduces what can be its rough edge - at least with the Weis bottle I’m using.
