History

Review

The Tom Collins was originally made with genever, so this is the original Collins. However, old tom gin replaced genever on a Tom Collins, relegating genever to what has become known as the Dutch or Genever Collins.

AKA: Genever Collins or Phil Collins

Variations/similar cocktails

Variously known as the Dutch Collins or the Genever Collins, and in recent years the "Phil Collins" (not after the musician but after Philip Duff and his Old Duff Genever). There are lots of other siblings in the large Collins family:
Captain Collins - with Canadian whisky
Colonel Collins - with bourbon whiskey
Dutch Collins or Genever Collins (aka Phil Collins) - with genever/jenever/Hollands
Jack Collins - with calvados
Jock Collins or Sandy Collins - with Scotch whisky
Joe Collins or Vodka Collins - with vodka
John Collins - with London dry gin
Jose Collins or Pepito Collins - with tequila
Mike Collins or Ronan Collins - with Irish whiskey
Pedro Collins - with light white rum
Pierre Collins - with cognac/brandy
Pisco Collins - with pisco
Rum Collins - with aged rum
Tom Collins - with old tom gin
Whiskey Collins - with bourbon/rye whiskey

Still trying to get my head around genever. Agree with JH’s description below re the sour note - reminiscent of sourdough. Tried directly after the classic Tom Collins, which I think I prefer at this point. But nonetheless tasty and refreshing.

I find "genever is like gin" comparisons quite strange, because they taste nothing alike. I liken jonge genever to vodka where the primary flavour is a minerality and a lot of nothing, and oude genever to a lighter scotch.

Had again with a supper of sausage waffles. It went perfectly.

Very refreshing any time cocktail. The lovely taste of the Genever is pronounced and nicely sour. Perfect.
