Serve in a Coupe glass

Ingredients:
1 fresh Cherry tomato (fresh) chopped
4 fresh Basil leaves
1 23 oz Light white rum (charcoal-filtered 1-4 years old)
56 oz Lemon juice (freshly squeezed)
56 oz Elderflower liqueur
16 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)

Garnish: Half cherry tomato & small basil sprig on rim

How to make:

MUDDLE tomato in base of shaker and then muddle basil leaves. Add other ingredients, SHAKE with ice and fine strain into chilled glass.

History:

Created by Robb Collins, Group Head Bartender at London Cocktail Club, London, England, who told us he made it for the 2015 Bacardi Legacy UK Finals. "Inspired by a fictional love story of an American soldier who falls in love with a French Cuban girl called 'Mariposa' during WWII."

I used 2 fresh cherry tomatoes but it doesn't look like in the picture. Look muddy.

Scaled to measure better with my jigger

2 fresh Cherry tomato (fresh)

60 ml Light white rum (charcoal-filtered 1-4 years old)
30 ml Lemon juice (freshly squeezed)
30 ml Elderflower liqueur
7.5 ml Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)

Although the first comment was: "vegetal" my guest (and me) were very much pleased. I put some "Pimentón de la vera" (smoked red pepper powder) on the deco and next time I consider putting some into the drink before shaking.

Maybe my favorite cocktail using elderflower (just behind Tony Abou-Ganim's 'Ruby'). I used St. Elder and it seemed to stick out a bit too much. Might want to dial the measure back a touch, depending on the brand. Otherwise lovely.
