Ingredients:
1 12 oz Rémy Martin V.S.O.P. cognac
12 oz Cynar or other carciofo amaro
0.42 oz Yellow Chartreuse (or génépy liqueur)
1 dash Orange Bitters by Angostura
1 dash Angostura Aromatic Bitters
2 drop Saline solution 4:1 (20g sea salt to 80g water)
13 oz Chilled water omit if using wet ice
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lemon zest twist.
  3. STIR all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Express lemon zest twist over the cocktail and discard.

Fantastic! Balance and synergy in pure forms... I felt coconut notes! :-).. Used this Chartreuse brazilian clone, Abadia, and Jerez brandy instead of Cognac...

Really well balanced. Slight chocolate notes to this cocktail. Definitely great after dinner.

By chance came across this cocktail again having forgotten to follow up as noted in comment below on trial with saline. I can report 2 drops of 20% saline definitely enhanced this cocktail for me. Curiously, while expecting it to decrease bitterness (Note: I didn't find this drink overly bitter), what I found was it really brightens the drink I believe by enhancing what ever citrus there is in the Yellow Chartreuse. Not having a particularly refined nose, I may be completely off base. Thoughts?

Retrying with a spicier cognac and Bitter truth bitters for both orange and aromatic, which seemed to emphasise the herbal qualities of the drink, pleasingly so. Curious to try Strega in place of the yellow chartreuse and see the result.

This was borderline stellar with Dolin Genepy replacing the Chartreuse Jaune. Near ideal texture and back-end, herbal-tonic treble.

I was wondering if this might finally convert me to yellow chartreuse, but regrettably not. I added a generous splash of Cocchi Americano to freshen it up a a bit more.

My second Cynar cocktail in as many nights. Really enjoyed this as others have. I am curious to try with a drop of 2% saline; will try and remember to report back!

An abundance of herbal bittersweet flavours which if you swirl it around your mouth almost explode in intensity.

I have wanted to like this recipe for a long time. Too often I have all but one ingredient in this recipe on my bar, and have mixed many Frankenstein versions of this recipe to much chagrin. This recipe really sings as is. Don’t negotiate with it!

Complex. Bitter, herbal, and perfectly sweet for a digestive. A bit strong, but I think it is more the flavours than the proof of the cocktail.
