Serve in a Coupe glass

Ingredients:
2 oz Bourbon whiskey
34 oz Lemon juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lemon zest twist.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice).
  5. FINE STRAIN into chilled glass.
  6. EXPRESS lemon zest twist over the cocktail and use as garnish.

History:

Whereas the addition of egg white to a Whiskey Sour is optional, egg white is a requisite in a Boston Sour – a Boston Sour is simply a Whiskey Sour with egg white.

I made this this evening with Woodford's Reserve (40% ABV here in Australia) - I normally make old fashioned with this as the wood varnish-like qualities shine. However- using in this sour along with aquafaba that same nose is there but with warm butterscotch flavour over other flavours- most surprising, next time I will knock the syrup down to 10ml. Wonderful sour.

Beautiful. I actually prefer this over the rocks version. Perfect balance of fluffiness, sourness, and the corn, baking spices and caramel of the Bourbon.

I used Fee Brothers Fee Foam Cocktail Foamer in place of the egg white. It worked wonderfully. Nice cocktail. It will definitely be revisited.

Nicely sour. Frothy head does add interesting texture to the cocktail. Subtle tastes of the corn from the bourbon comes through. Excellent any time cocktail.
