I tried it straight up with a Tajin rim, which works good. But the Monin Orgeat is too dominant, using this I will reduce it next time and possibly use more the lime juice.
Tweaked it slightly as no Aperol and as usual subbed a smaller does of Campari (10 ml) but would have actually been better with 15 ml to balance the Orgeat. Upped lime to 20 ml. A simple Tajin is very easy to replicate if again like mine you are missing this; Grate/zest 1 lime onto kitchen paper, transfer to small piece of foil and dry in a very low oven for 20 mins. Then add 1/2 tsp chilli flakes, 1/4 paprika and 1/4 salt. Grind all ingredients together in a pestle and mortar et voila!
Oh yeah! Great summer afternoon cocktail. Sipping now while on a coastal vacation and it is really hitting the spot. Also a good way to finish off the Aperol after the Prosecco for spritzes runs out.
Oh boy this is great, these Aperol-Campari cocktails are really sweet spots for me. I saw this cocktail at Lui Fernandez and checked if it was listed here too, of course it was. Aperol is a bit less than in his recipe, I think it's the perfect ratio.
A very interesting drink. All the ingredients come through in layers. Has a long lingering bitter aftertaste, not unpleasant. I do like tajin, but it confuses the palette here. Maybe my dusting was too generous? I think a better way to include it would be to rim half the glass to separate the flavours, just like you wouldn’t put salt in a margarita, but it’s an essential ingredient. I think that would help clear up the confusion to the taste buds. Still, a nice drink. Worth playing with.
I've made this once as written & the second time with 3/4oz Lime juice serving it up in a coupe. The latter was less sugary & more balanced for me, but dusting the rim of the glass with Tajin was what made all the flavors come together & worth concocting this cocktail again.
Very good drink. It starts off bright and sharp with citrus, and moves to bitter herbal with an almond background. Definitely an unexpected but very pleasant experience.
Using Amero offers a gently sweet experience. Using Campari offers a more boisterous, bittersweet experience. We go with Campari but each to their own. Simon rarely, if ever, specifies a recommended Italian bittersweet aperitivo. The range is wide so happy experimenting!
Great drink, but just a bit too sweet and creamy - maybe I overpoured the Orgeat. I will try again, with just 1/4 oz Orgeat and mix in a 1/2 oz of Mezcal.
Doesn't quite work if you substitute Campari for Aperol (as you might do if you open the drinks cupboard to find you've run out) To much of a bitter aftertaste.
I was in a hurry, there was no picture, so I proceeded making this but didn’t read the end of the recipe about serving it on crushed ice so made it as a standard cocktail. It was still very nice and will make it again but properly next time. I’ll ask my neighbour friend if she has tajine spices too.
Hello there, so I got ourselves a bottle of Aperol, against my principles ;) and made the South Slope tonight. It was very nice indeed, plus the colour is wonderful, but I think I will make this soon again with Campari. Thanks for the tip
Greetings Nathalie. When I first tried Aperol I thought it a bit underwhelming alongside Campari and such. After trying so many good recipies here on Difford's Guide it's now a constant on my shelf alongside Campari (or Luxardo). Just tried this with Campari/Aperol 50:50 and thought the Campari a bit much until the ice melted some. Will stick with Aperol next time but on the rocks or in a chilled coupe. Do try the cocktail South Slope but with Campari. Excellent.
This is a great drink. I've made it several times, but now I finally have the Tajin to sprinkle on top. Such a difference to be able to get a whiff of the smoky chili before the taste. I make it with .75 Aperol. We really like it!
Unexpected surprise. It is very much like a margarita with a hint of herbal included. Everything works perfectly together and no ingredient overpowered the other. Would certainly be great anytime.
Agreed. I never would have guessed, but this will be in my regular rotation from now on. I'm a big fan of Aperol with tequila and was unsure of the orgeat, but my apprehension was completely unfounded.
An instant favorite — I could drink these all day. It’s essentially a brighter margarita — with Aperol in place of triple sec, and orgeat subbing in for agave syrup. A bit sweet as written, so you may want to dial down the orgeat to taste if you prefer a punchier drink.
WOW! Talk about synergy. These ingredients merge to form one flavor with all their component contributions present. I couldn't set this down. Poured over ice chips, not crushed. Now I have to get some Tajin seasoning.
