3/4 fl oz Strucchi Dry Vermouth
3/4 fl oz Strucchi Rosso Vermouth
3/4 fl oz Orange juice (freshly squeezed)
1 dash Angostura Aromatic Bitters
2 drop Saline solution (20g sea salt to 80g water) or merest pinch of s

How to make

Glassware

Serve in a Coupe glass

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of orange zest twist.

Method

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish

  1. EXPRESS orange zest twist over the cocktail and use as garnish.

History

A riff on the Bronx cocktail, the Income Tax cocktail first appeared in Harry Craddock's 1930 The Savoy Cocktail Book.

INCOME TAX COCKTAIL.
1 Dash Angostura Bitters.
The Juice of ¼ Orange.
¼ French Vermouth.
¼ Italian Vermouth.
½ Dry Gin.
Shake well, then strain into cocktail glass.

This is very good for an aperitif. We used some fresh tangerines instead of oranges to bring the sweetness down a bit. Made the cocktail a bit drier.

I used mandarins and it was unfortunately not a good result. Strangely earthy and unbalanced. Maybe Ango is not a good option for bitters. It needs the relative levity of orange bitters, like a normal Bronx.
