Ingredients
1 1/2 fl oz Calvados / apple brandy / straight applejack
3/4 fl oz Lemon juice (freshly squeezed)
1/2 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
1/2 fl oz Egg white (pasteurised) or Fee Brothers Fee Foam cocktail foamer
3 dash Angostura Aromatic Bitters

Prepare

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of lemon zest twist (discarded) and garnish with a skewered lemon slice wheel and Luxardo Maraschino Cherry sail.

Method

  1. SHAKE all ingredients with ice.
  2. STRAIN back into shaker.
  3. DRY SHAKE (without ice).
  4. FINE STRAIN into ice-filled glass.

More complex than its bourbon namesake and without the tartness of the lemon/alcohol combo thanks to the apple that would make this cocktail seem soft. Very treacherous and very good!

I dialed back the sugar and should have followed Simon. Great cocktail and the egg white really smooths out the lemon bite. Having the apple flavor in a sour is perfect for fall cocktail.

Terrific! Using Daron calvados and Demerara syrup, the apple flavor was deliciously present. So interesting that apple and lemon would work so well together. Prefer it to a whiskey sour!

This is a very good sour- the apple and lemon are well matched. I made mine with Lairds applejack; will try again with calvados next time.....
