Garnish:
Lemon zest twist (expressed and discarded) & skewered raspberry
How to make:
STIR jam with gin in base of shaker until dissolved. Add other ingredients, SHAKE with ice and strain back into shaker. DRY SHAKE (without ice) and fine strain into chilled glass.
1 1/2 fl oz | Rutte Dry Gin |
1 1⁄2 spoon | Raspberry jam |
1/2 fl oz | Dry vermouth |
3/4 fl oz | Lemon juice (freshly squeezed) |
1/3 fl oz | Pasteurised egg white (or aquafaba) |

Review:
Fruity, light, well-balanced and easy-drinking.
Variant:
Substitute gin for vodka or tequila. Different flavours of jam may also be used - blackberry works well.
