2 fl oz Hayman's Old Tom Gin
1 fl oz Lemon juice (freshly squeezed)
12 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
12 fl oz Egg white (pasteurised) or 3 dash Fee Brothers Fee Foam cocktail foamer (optional)
3 dash Angostura Aromatic Bitters
3 drop Saline solution (20g sea salt to 80g water) or merest pinch of s (optional)

How to make

Prepare

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of skewered lemon slice wheel and Luxardo Maraschino Cherry sail. (Skewer through either side of lemon with cherry skewered in the centre.)

Method

  1. SHAKE all ingredients with ice.
  2. STRAIN back into shaker.
  3. DRY SHAKE (without ice).
  4. FINE STRAIN into ice-filled glass.

Garnish

  1. Garnish with skewered lemon slice wheel and maraschino cherry (sail).

This 8:4:2 formula is a tad sourer than the classic sour proportions of 8:3:4 – two parts of the strong ingredient (gin), three-quarter parts of sour (lemon juice), one part of the sweet ingredient (sugar syrup). However, depending on your lemons, this should be perfectly balanced, especially if using old tom gin, as recommended. Hit the right balance, and this is a delicious cocktail.

There's a bit of a kerfuffle on that "other" site about the necessity of an egg white to make a sour a sour. Some arguing that it's optional. Any thoughts?

I personally wouldn't make a sour without egg unless pushed into it by circumstance or at the request of the person I'm making it for, but yes, it is optional, so I have marked accordingly above.
