Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of Luxardo Maraschino Cherry.

Method

  1. STIR all ingredients with ice.
  2. FINE STRAIN into chilled glass.

  1. Garnish with maraschino cherry.

Such a wonderfully sumptuous and yet simple cocktail. As a Cognac variant, we have settled on a base spirit split of 30ml Cognac and 15ml Mezcal (we think that they are a match made in heaven).

The comments here are interesting. I substituted the Punt e Mes with Cocchi Torino and little helpings of Ango and Campari and it was surprisingly balanced! Though I will say that the cherry liqueur got a little lost.

Inveterate fiddlers that we are, we decided to try a Cognac version of this...simply substituting the 45ml of Mezcal for the same volume of Cognac. But retaining 5ml of Mezcal. We loved it. Next time we might go more on the Mezcal, out of curiosity. The original version of the drink is brilliant, of course.

Smoked cherry goodness. What’s not to like? More Phil ward magic. I’d be tempted to try with Cocchi vermouth amaro subbed for the punt e mes next time.

Had to extemporise so swapped Cherry Herring with De Kyper and I only had Zignum Mezcal (not very Smokey). However a great cocktail, less sweet than others have noted and of course less smoke. Terrific balance
