Prepare

Select and pre-chill an OLD-FASHIONED GLASS.

Prepare garnish of skewered pineapple wedge or dehydrated pineapple slice and Luxardo Maraschino Cherry.

Method

SHAKE all ingredients with ice.

FINE STRAIN into ice-filled glass.

Garnish

Garnish with skewered pineapple wedge or slice and maraschino cherry.

This one surprised me. I used a spiced/tiki bitters that I know has allspice in it as my only option (it also some other, tropical ingredients), and it was a great call for me. It added a slightly tropical edge to this whiskey sour.

Recommend trying this one with a 2:1 ginger syrup, I had some I needed to use up and it melded very well with the bourbon, pineapple and lemon juice, didn't have pimento bitters so I gave it a hefty 2 dashes of regular angostura. Buffalo Trace was the bourbon.

I preferred Two shots of bourbon and use ogeat instead of sugar syrup. Tikiness with bourbon warmth.

Had this again with a California Bourbon which added a slight spicy (savoury; not hot) touch to the after taste. Left out the syrup to make the final cocktail dryer. Wonderful. Getting elevated up to my favourite cocktails.

A really delicious tiki drink, I especially like the bourbon backbone. Pineapple works very well with the bourbon and lemon. I used allspice dram in place of the pimento bitters (not available locally, and $20/5 oz on Amazon) - I didn't really make much of an impact (maybe the bitters are worth it?)

Macerated a chunk of pineapple in the shaker for extra fruit, used half lemon/half lime juice and orgeat instead of syrup. No DeGroff bitters but I do have homemade, unsweetened pimento dram so used a tsp of that instead. Did somebody say Tiki?!
