Garnish:
Orange zest twist (a lemon zest twist is more classic). Some also like a sugared rim but hopefully added Pineau des Charentes richness renders this sweet rim embellishment superfluous.
How to make:
SHAKE all ingredients with ice and fine strain into chilled glass.
1 1/4 fl oz | Rémy Martin 1738 Cognac |
5/6 fl oz | Triple sec liqueur (40%) |
5/12 fl oz | Lemon juice (freshly squeezed) |
1/3 fl oz | Pineau des Charentes blanc |
1/4 fl oz | Chilled water (omit if using wet ice) |

Complex and just a smidgen on the tart side of balanced so still very much a sour. Those with a sweet tooth may prefer to serve with a sugar rim.
